Origin: Our organic Silvery Moon white tea is sourced from the Yunnan Province in China from tea farms located within an area that is part of a National Nature Reserve on Wu Liang Mountain. The buds used in this tea are often plucked at dawn or dusk in cooler dewy conditions, sometimes even at dark, as farmers believe that the air’s high oxygen and energy levels combine to produce a tender, smoother tea-leaf taste.
There is a legend about the origin of white tea. In the old times when the Yao emperor ruled, there lived an old woman in the mountains east of China. She earned her living by growing orchids, and was known for her good nature and kindness. Beloved by people, she was gently addressed as Lan Gu, “Aunt Orchid”. Once, great misfortune fell upon their land. An outbreak of measles plagued many lives in their region. There was no known cure, and salvation was feared to be impossible. But then, one night a Taoist monk came to Lan Gu in a dream. He told her that drinking the brew made of white tree buds would help to overcome this plague of measles. Lan Gu awoke that night and left her house. She noticed the extraordinary brightness of the moonshine lighting the path as if calling her to follow, which she did. The path led her to the tea tree that appeared to be glowing white due to the nap (tiny hairs) on its leaves and buds which reflected the silvery moonlight. The aunt gathered the buds, dried them in the sun the next day, brewed the tea for the diseased, and miraculously, all of them recovered. Since then, white tea has been called, “The Potion of Immortality”, and the woman known as Aunt was given a new name, Tai Mu, “the Great Mother”. Later Tai Mu taught all of the local villagers how to grow, dry, and brew white tea. Centuries have since passed, but the tea still grows in those mountains, and same as before, the tea is still used to cure different diseases. These mountains have also been named after Tai Mu, and are known as Tai Mu Shan, Great Mother’s mountains.

1 - 2 large teaspoons (or approximately 2 grams) per 8oz cup of less than boiled water, preferably 185F or less, so as not to scorch these delicate leaves. Adjust amount of tea according to your personal taste. Use more tea for a stronger brew. Use less tea for a milder flavor.
Brewing Tip: As with all white tea, before pouring the heated water over the leaves, test the temperature on your lips or tongue. If the water scorches your delicate skin, then it will do the same to the delicate tea leaves.
