Origin: It may surprise you to know that France was drinking tea decades before England. That’s right! Tea first came to Paris via the Dutch in 1639 for medicinal purposes, because doctors in France believed that tea could treat all kinds of illnesses. During this time France and the Netherlands were the biggest importers of teas. To be clear - French tea is not British tea. The tannin-rich, dark, heavier brew beloved of the British did not appeal to the French aristocratic palates that were more discerning requiring teas that were more refined and delicate. Especially during and well after the French Revolution, the practice of tea drinking in France remained in homes of the elite, and so tea was seen as a thing of decadence and indulgence, not readily accessible or affordable for the lower, working-class.

We needed a tea that was elegant, smooth, and refined enough to honor the storied history of tea in France. We found what we were looking for in this single-estate black tea of the Nuwara Eliya District of Sri Lanka, a picturesque, verdant highland community nestled between the great Kelani and Mahaweli Rivers. This tea delivers a classic, pure taste in the Ceylon style.

1 - 2 large teaspoons (3.5 grams) per 8oz cup of less than boiled water, preferably 200F or less.

*Brewing Tip: As with all black tea, steeping for longer times and at higher temperatures, will only activate more tannins increasing astringency and bitterness. Instead, use more tea for a stronger, bolder brew, or use less tea at lower temps for a softer, more mild flavor.

Sample size provides at least 4 servings. 1.5oz pkg provides at least 12 brewed cups.

Pre-measured tea packs contain 2 easy-to-brew pouches. One pouch brews 32oz of tea; the perfect size for a standard English Pot of Tea. Two pouches together will brew 64oz, the standard household pitcher or half-a-gallon, just the right amount for Iced Tea.

For a quick Iced Tea preparation, steep both pouches together in 32oz of water per the temperature & steeping time suggested. Then finish by adding the strongly brewed tea to cold water and/or ice to fill your standard 64oz pitcher. You can remove the pouch(s) at any time once the flavor you desire is achieved. Sweeten & garnish to your liking.
