Origin: Our Balmoral Breakfast is an exclusive, proprietary blend created in-house in the style of a traditional British Breakfast tea mixing Assam and organic Keemun black tea leaves sourced from tea plantations and estates in India and China.
Before the Opium Wars of the nineteenth century between China and England, most all of the tea consumed throughout Europe had been exclusively black tea from Qimen County in the Anhui Province of China. However, as a result of these wars and the tea embargo imposed by China, England formed the British East Indian Company that started producing black tea in India. This inspired an enterprising Scotsman named Robert Drysdale to begin blending and marketing his own version of a black China morning tea as a ‘breakfast tea’ which almost certainly combined both Chinese Keemun and Indian Assam black teas. It is rumored that Queen Victoria of England became enamored with this new tea blend while visiting Balmoral, and brought some home with her to England. Not long after, this morning tea blend was being marketed and sold as “British breakfast tea” throughout England, and remains a popular choice for breakfast tea today.
As individual teas, Assam has a deep malty flavor with astringent notes and a dark color, whereas Keemun has slightly smoky notes in the aroma and a gentle, malty, non-astringent taste reminiscent of unsweetened cocoa.

1 large teaspoon (3 grams) per 8oz cup of less than boiled water, preferably 200F or less.
*Brewing Tip: As with all black tea, steeping for longer times and at higher temperatures, will only activate more tannins increasing astringency and bitterness. Instead, use more tea for a stronger, bolder brew, or use less tea at lower temps for a softer, more mild flavor.
Sample size provides at least 4 servings. 1.5oz pkg provides at least 14 brewed cups.
Pre-measured tea packs contain 2 easy-to-brew pouches. One pouch brews 32oz of tea; the perfect size for a standard English Pot of Tea. Two pouches together will brew 64oz, the standard household pitcher or half-a-gallon, just the right amount for Iced Tea.
For a quick Iced Tea preparation, steep both pouches together in 32oz of water per the temperature & steeping time suggested. Then finish by adding the strongly brewed tea to cold water and/or ice to fill your standard 64oz pitcher. You can remove the pouch(s) at any time once the flavor you desire is achieved. Sweeten & garnish to your liking.
CAUTION: Do NOT pour hot or boiled water into any plastic pitchers or containers, ever.
